Fiesta Chicken

3-4 Chicken Breasts
2 Packets of Fiesta or Spicy Ranch
1 can of rotel
1 can of corn (all)
1 can of rinsed black beans
1 Brick of Cream Cheese (Optional - can use fat free or sub 1 cup non fat greek yogurt after cooked and shredded for creaminess)

Put all in crockpot on low for 4 hours or high for 6. Shred and then eat on rice.

Roasted Parmesan Green Beans

1 lbs fresh green beans
1 TBSP olive Oil
2 TBSP parmesan cheese
2 TBSP Panko bread crumbs
1.4 tsp garlic powder
salt and pepper to taste

Mix all in a bowl. Lay out on baking sheet and cook for 15-20 minutes at 400 degrees. Turn over 1/2 way.

Turkey Veggie Chili with with Avacado, Cheddar, and Cilantro (No beans)

2 Avacados
2 sticks of celery
Cheddar Cheese
Cilantro
2 (14.5 oz) cans of diced tomatoes
6 cloves of garlic
1 1/2 lbs ground turkey
2 jalapeno peppers
1 lime
2 red bell peppers
1 medium yellow onion
1/4 tsp black pepper
2 tbsp chili powder
1 tbsp cumin
1/2 tsp salt
cooking spray (olive oil)

1. peel and dice onion, tranfer to a medium bowl. Peel and mince garlic (or used minced garlic (about 5 tsp). Add to bowl
2. Wash bell pepper, celery, and jalapeno Seed and small dice peppers. Trim and small dice celery. Seed and mince jalapenos.
3. Spray pan and sautee onions, garlic, bell pepper, celery, and jalapeno. Cook and stir frequently until softened.
4. Add ground turkey and cook until browned.
5. Add chili powder, cumin, salt, and pepper.
6. Add tomatoes and stir to combine. Cook, stirring occasionally for about 8-10 minutes.
7. Add desired cilantro to pot, and save a little for garnish.
Serve chili with desired cheese, avacado, and cut up lime wedges. (Be sure and squeeze the lime on top... it is the best part!)

Tuna Salad or Chicken Salad

1 can tuna in water
0% Fat Greek Yogurt
chopped pickles
1/4 apple (chopped and diced)
salt and pepper to taste

Drain tuna, add it desired amount of yogurt (like mayo), add in pickles and apples if desired. Salt and pepper. East with lettuce as a salad, or on Ezekial bread as sandwich, or however you like.

*** With chicken, I like greek yogurt, salt, pepper, celery, apple, or grapes. Whatever you like. : )

Biggest Loser Meatloaf Recipe

2/3 Cups of Oats
1/2 cup Fat Free milk or almond milk
1 lb extra lean ground beef
1/2 cup chopped spinach
1/2 cup minced onion
2 large egg whites
2 tsp Italian seasoning mix
1 tsp Worcestershire sauce
1 tsp minced garlic
1/2 tsp salt
1/3 reduced sugar or unsweetened Ketchup

Mix all together, cook at 350 for 45-55 minutes until looks done.

Artichoke Chicken with Tomatoes

2-3 Chicken breasts
Balsamic vinegar
minced garlic
salt, pepper
1 can artichoke hearts
1 container cherry tomatoes

Marinade chicken in minced garlic, balsamic vinegar, and salt and pepper for at least 2 hours.
Bake or grill.

In a separate dish sauté halved tomatoes with artichokes in balsamic vinegar and minced garlic. Add more salt and pepper.

Add chicken in chopped or whole and simmer for 15 minutes. Enjoy.

Bruschetta Chicken

Brushetta

1/4 cup of olive oil
3 TBS chopped fresh basil
3-4 garlic cloves, minced
1/2 tsp salt
1/ 4 tsp pepper
4 medium tomatoes, diced
2 TBS grated parmesan cheese (optional)


marinade:
Balsamic vinegar
minced garlic
salt, pepper

Marinade chicken in vinegar, minced garlic, and salt and pepper overnight or for a couple of hours. Grill, or bake.

Prepare Brushetta and place on top of chicken, serve.

Buffalo Chicken

3-4 Chicken Breasts
1-2 Cup of Franks Hot Sauce or your favorite Buffalo sauce

Place in crockpot on low for 4 hours or high for 6 hours.

Shred and eat on top of salad, in lettuce boats, or in zucchini boats.

*Also you can add 3 TBS ranch powder for additional flavor



Chicken Salad

2-3 Cooked, shredded or cubed chicken breasts
1 cup of chopped celery
salt, pepper, garlic salt to taste
1 cup 0% Fage greek yogurt
1 cup of halved grapes

Mix all together for a yummy clean chicken salad.
You can add nuts also if you wish. Change measurements as needed.

Chili



2.5 pounds extra lean ground beef or ground turkey
30 oz can kidney beans
30 oz can pinto beans
30 oz can tomato sauce
30 oz can diced tomatoes
1 can diced green chiles
1 chopped green bell pepper
1 chopped white onion
3 TBS chili powder
1 TBS cumin

Cook meat unitl done, then add all ingredients into a large pot or crockpot. Simmer as long as needed, but at least 1 hour.

Serve with desired toppings (cheese, fritos, sour cream, etc). *Fage 0% greek yogurt is a great substitute for sour cream.

Chicken Enchilada Squash Bake


3-4 Chicken Breasts
1 Large can of Red Enchilada Sauce (or make your own)
1 Spaghetti Squash
1 Can of black beans
2 cups of mozzarella cheese
salt, pepper, garlic salt






Place Chicken and enchilada sauce in a crockpot and turn on high for 4 hours or low for 6 hours. 



Cut open spaghetti squash, scoop out insides. Salt, pepper, and garlic salt and place face down on top of chicken. 


After desired time, take squash out, shred chicken, shred squash with a fork and put back into crockpot, add black beans and let cook for a bit to warm up beans. Add mozzarella if you'd like, and stir up. Serve.
